Black Bean Thai Pasta

This meal is easily one of my favorites. It's so simple, but so tasty. And I don't feel guilty about it AT ALL!
The Black Bean Spaghetti is a staple in my house. Costo sells Explore Cuisine Edamame Pasta (I use it interchangeable with the Black Bean Spaghetti). I also buy it in bulk on Amazon. We prefer this pasta for all of our pasta dishes now. Even the kids love it!
This recipe also has lots of veggies, which I LOVE! The onions and peppers in this recipe offer lots of antioxidant benefits.
For one serving, this meal is 296 calories. 39g Carbs, 28g Protein and 8g Fat.

Ingredients:
· 2 oz – Explore Cuisine Black Bean Spaghetti
· ½ cup (68g) – Bell Pepper (thinly sliced)
· ¼ cup (28g) – Grated Carrots
· ¼ cup (28g) – Red Onion (thinly sliced)
· ¼ cup (37g) – San-J Gluten Free Thai Peanut Sauce
· 1 medium (15g) – green onion (chopped)
· 1 sprig – Fresh Cilantro
Preparation:
1. Boil pasta according to package directions.
2. Add the grated carrots, red onion, and bell pepper to a skillet and cook over medium-high heat until the veggies are barely tender (about 5 minutes.) Add the peanut sauce to the pan and heat through.
3. Toss the pasta with the sauce and veggies and top with chopped green onions and cilantro (if using).
