I've been so excited to try out some Pumpkin Overnight Oats, so when I finally founds some cans of pumpkin the store, I knew this was the first thing I was making! I'm not sure if this is just where I live, but I haven't been able to find cans of pumpkin since pre-pandemic (this is a thing now). I guess everyone has been hoarding it with their toilet paper and disinfectant wipes.
I made this last night and Brian and I couldn't wait for breakfast today to give it a try and it did NOT disappoint!
There are a lot of reasons I love overnight oats (mostly they're easy and delicious). But they're also rich in a lot of nutrients! Oats are rich in fiber which helps to lower cholesterol and help to balance blood sugar. They are also loaded with vitamins and minerals! Pumpkin is high in fiber and Vitamin A. It is also full of iron and zinc! All these things combined make this a nutrient packed breakfast! These overnight oats taste like dessert AND help boost your immunity, lower cholesterol and prevent chronic diseases!
