Pumpkin Pie Oat Bites

This is a great recipe for a grab n' go snack! The kids love them and I don't feel bad about them grabbing a few as they please throughout the day.


Oats are full of antioxidants which help to prevent heart disease and some cancers. They are also high in fiber which helps to prevent constipation! Pumpkin is high in vitamins A and C which boosts our immune system!

Ingredients:


-2.5 cups dry Oats

-1 cup Pure Pumpkin Puree

-3 Tbsp Honey

-1 Egg

-1 tsp Vanilla

-1 tsp Pumpkin Pie Spice

-1/4 cup Chocolate Chips

-1/4 cup Craisins


Directions:


  1. Preheat oven to 350 degrees.

  2. Mix the Pumpkin Puree, Honey, Egg, Vanilla and Pumpkin Pie Spice in a large mixing bowl.

  3. Slowly add in the Oats and continue mixing until you have a thick batter.

  4. Split the batter in half and add chocolate chips to one half and craisins to the other.

  5. Prepare a baking sheet or muffin tin and divide the mix into 24 bites. (you could make these into cookies by making them bigger on a cookie sheet, this batter would make about 12 cookies)

  6. Bake for 18-20 min, until oats are crispy on top.

Note: You could add anything you want to this mix. I chose craisins and chocolate chips since they're favorites in this house. You could add raisins, walnuts, or nothing at all!


Each bite is 85 calories. 15 carbs, 2 protein and 2 fat.
